In more and more markets duck products acquire acclaim. Duck meat is tasty and it offers a good and healthy source of protein. As ducks have a natural floating capacity, extra measurements have to be taken during the immersion procedures. That's why duck scalders are equipped with an extra agitator to cause a downward water flow.
As far as the end products are concerned, a perfect duck skin presentation is extremely important to meet the highest possible requirements. Therefore we introduced an elaborate, efficient waxing system to thoroughly remove all feathers without damaging skin.
Marel Stork is able to set up completely automated, specialized duck processing plants with a high-speed capacity up to 6,000dph. Besides an unrivalled level of automation, the unique modular inline solutions ensure a consistent production of duck meat with the highest possible yield and quality.
