A major factor in dry sausage production is the uniformity of the finished product. Marel's fully automated processing lines accurately check that the desired fat content of the finished salami or pepperoni is not exceeded. Each and every batch is standardized by means of our FATscan analyzer, which measures the fat content of the meat immediately after it leaves the grinder. Online measurement renders time-consuming laboratory testing superfluous, while at the same time contributing to optimal production hygiene.

Unlike in traditional salami and pepperoni plants, the product is automatically transported between the various machines. Our excellent range of product handling and logistics solutions assures a stable production flow.

Controlling meat preparation

To let you to create a meat mass with a consistent, uniform quality, our preparation line for dry sausages uses a central recipe management system. It takes full control of the line, ensuring intelligent product handling, full traceability and giving you a more secure and reliable meat preparation process, independent of skilled operators.

Monitoring and reporting

The system gives you a complete overview of individual machine status as well as the general operation of the full line, including fault and alarm handling. For added safety, the system also has a global emergency-stop function. For quality management, batch reports can also be viewed.

Central recipe management

To ensure every batch prepared meets your precise specifications, you can create, edit and store your recipes centrally. They system also allows you to specify routings of individual batches
